Raw Berry Cheesecakes

These raw cheesecakes, made with our organic frozen mixed berries, are oh-so-easy to put together. They're also dairy-free, vegan and taste amazing! Thanks so much Sav from @livingwellwithsav for creating these thoughtful little treats (especially the base, packed with the nutty goodness of LSA, and sweetened with dates). They look great served on plain white plates and of course you can add fresh berries, a curl of our chocolate coconut dairy-free dessert, or sliced fresh banana to them just before serving.


Recipe

Base:

- 1 cup oats

- 2 TBS LSA 

- 2 medjool dates

- 1/2 cup desiccated coconut

- 1/4 TSP cinnamon

- 2 TBS coconut oil

- 1/4 cup + 2 TBS almond butter


Filling:

- 1/3 cup cashews

- 2 TBS maple syrup

- 2 1/2 cups oob organic frozen mixed berries

- 1/2 cup oob organic frozen banana

- 1/2 cup coconut cream

- 1/4 cup water.


Method:

1. Soak the cashews in boiling water and let sit for 30 minutes.

2. Blend (in a blender on high speed) the oats, LSA, dates, coconut, cinnamon, maple syrup, coconut oil and almond butter until combined.

3. Press into tart tins and put in the freezer while you make the filling.

4. Spoon out the cashews from the water and put in the blender and also add the maple syrup, frozen mixed berries, frozen banana, coconut cream and water until blended and smooth.

5. Spoon in the filling on top of the base and put in the freeze over night. 

6. When ready to serve, take out of freezer 30 minutes prior to eating and top with shaved coconut and mixed berries.
