Berry Brandy Snap Baskets

A quick and easy dessert that looks amazing and has the perfect mix of texture and taste... gingery snaps, rich cream and the sharp sweetness of our organic berries. A modern twist on a good old Kiwi favourite!

Makes 10 - 12.


Ingredients:

10-12 Brandy Snap Baskets

600ml heavy cream

1 cup oob organic frozen raspberries

1 cup oob organic frozen blueberries

1 cup oob organic frozen blackberries

1 tablespoon icing sugar

10 fresh mint or basil leaves

Directions:

1. Remove berries from oob packets and place onto a tray, allowing them to defrost

naturally, keeping their shape and fullness.

2. Using a stand or electric mixer, beat the heavy cream until firm. Once firm, sprinkle

in the icing sugar and beat quickly to mix through.

3. Place the brandy snap baskets on a serving platter and dollop the cream inside each.

Top with berries and fresh herbs. You can drop a little passionfruit pulp inside for extra colour.
