Blueberry Crumble Bars

Dreamed up for us by Hannah, these crumble bars are easy, tasty and can be made with any of our oob organic berries.


Recipe

INGREDIENTS 

For the Base and Crumble:

1/4 scant cup Coconut Oil

1/4 cup Brown Rice Syrup 

1 cup Oat Flour

1/3 cup Rolled Oats

1 scoop Vanilla Protein Powder

1/2 tsp Vanilla

For the Berry Middle:

1 cup Frozen Blueberries 

2 tbs Chia Seeds

1 tbs Cornflour

METHOD:

  1. Preheat oven to 180°c

  2. Mix base ingredients together in a bowl until combined. Take 3/4 of mix and press into a lined baking tray. Set aside other 1/4 to use for crumble topping. 

  3. Make the berry filling by adding all ingredients to a saucepan and heat on the stove. Mash with a fork when mixture is warm. Pour over base, then sprinkle the crumble over the top. 

  4. Bake for 25 minutes (or until nice and golden brown). 

  5. Best served heated and topped with coconut yoghurt or oob organic vanilla ice cream.

Makes 6 bars, and can be stored in the fridge for up to one week.
