These prawns are coated in a beautifully sticky mango chutney made from scratch (which might sound scary but it’s as easy as putting all the ingredients into a saucepan with some water and letting it quietly simmer away while you prepare the prawns - perfect!)
Recipe:
Ingredients:
- 20 raw whole prawns
- 4 cloves of garlic
- 4 Tbs butter
- 1 Tbs curry powder
Mango chutney ingredients:
- 200g oob organic frozen mango
- 1cm finely diced ginger
- 2 cloves finely minced garlic
- 1 finely minced chilli
- 2 Tbs coconut sugar
Method:
1. Firstly make the chutney. Combine all ingredients with one cup of water. Bring to a simmer and stir periodically to prevent ingredients from burning to the pan. After approx. 15 minutes chutney should be ready
2. Prepare prawns by taking off the head and shell (save heads to the side). Take out the poop tube.
3. Heat 4 Tbs of butter and fry the sliced garlic. Remove garlic from pan when it gets crispy (leave butter in pan). 4. Place the prawn heads in same pan with butter. Sautee the prawns for 1 minute then add the curry powder.
5. Add the prawn bodies and cook them until they begin turning opaque.
6. Add the mango chutney and toss through the prawns. Turn the heat off quickly to prevent over cooking the prawns.
Serve with saffron rice and garnish!
