Baked Banana & Chia Doughnuts (w/ organic choc glaze)

These doughnuts are glazed with organic chocolate - choose your own favourite block to use. Dark, milk or white... or a combination of all three!


Recipe:

Ingredients

 - 20g coconut sugar

 - 130g butter (softened)

 - 1 tsp vanilla extract

 - 2 free range eggs

 - 250g oob organic frozen banana

 - 220g spelt flour (white or wholemeal)

 - 25g white chia seeds

 - 1 tsp baking powder

 - 1 tsp bicarbonate of soda

 - 80g Organic Maple Syrup

 - 100g organic chocolate, block of your choice

Method:

1. Preheat oven to Bake @150°.

2. Lightly grease doughnut tray with butter and set aside.

3. Place sugar in mixer on high speed to mill.

4. Add butter and vanilla and blend until well combined. Then mix in the eggs one at

a time.

5. Add bananas to mixture and ensure they are blended to a smooth consistency.

6. Add spelt flour, baking powder, bicarbonate of soda, chia seeds and maple syrup.

Mix on medium speed to ensure the mixture is well combined.

7. Pour/pipe mixture into prepared doughnut tray and bake for approximately 10-12

minutes. (This will depend on the size of your doughnut tray).

8. Allow to cool in tray for 5 minutes and place on a wire rack.

9. Now for the best bit! Melt your favourite chocolate (either in the microwave or on

the stovetop). Dip your doughnuts and decorate! Place them in the fridge to set

for 10 minutes.

10. Make yourself a nice cup of tea or coffee, sit back and ENJOY!!

Recipe makes approximately 15 donuts.

Store in a glass container up to 5 days.
