Veges-for-breakfast omelette

Ingredients

  • 4 eggs

  • 1.5 cups milk

  • 1 tbs butter

  • 1/2 cup grated cheese

  • Half an onion.

  • 1 x cup each of oob organic green beans, broccoli and spinach.

  • Salt & pepper

    Method

  1. Melt butter in pan

  2. Add onion and sauté till translucent

  3. In a bowl, mix eggs, milk, salt and pepper

  4. Then stir in veggies + cheese.

  5. Pour into pan with onion and mix together.

  6. Cook on medium till mixture is bubbling

  7. Then transfer to oven and grill to brown the top.
