Charred Sweetcorn Salad


This yummy charred corn salad is just so easy and so good! Use the crispy warm wedges to scoop up the salad-y goodness which is full of nutritious veges, avocado and tasty seasoning. RECIPE:

Ingredients:

• one cup oob organic frozen sweetcorn

• one red onion finely chopped

• one cup of fresh chopped tomatoes

• one cup chopped coriander 

• chopped jalapeños (as many as desired)

• one diced avocado

• one chopped cucumber

• one sliced fresh red chilli

• smoked paprika 

• juice of one lemon

• salt

• pepper

• 1/4 cup vegan mayonnaise 

• one teaspoon sriracha

• desired amount of oob organic potato wedges 

Method:

Begin by following packet instructions to cook your wedges.

Place your frozen corn kernels into a frying pan over high heat. Keep them spread out in a single layer and turn frequently until nicely charred.

Combine the charred corn with all the chopped veggies and squeeze over lemon juice. Add salt pepper and smoked paprika to taste.

Serve the salad over your wedges.

Combine the vegan mayo and sriracha and drizzle over the salad.
