Loaded Green Toast with Green Pea Hummus - the perfect start way to start your day! Ingredients
Green Pea Hummus
200g oob organic frozen garden peas
1 x 400g can chickpeas, (about 250g cooked chickpeas)
1/4 cup tahini
1/4 cup olive oil or water
1 lemon, juice and zest
1-2 garlic clove, raw or lightly sauteed
1/2 tsp ground cumin
Pinch of salt
To Serve
2-4 serves of toast
100g oob organic frozen garden peas
50g crispy chickpeas
50g cherry tomatoes
Olive oil and herbs as desired
Instructions
Defrost all the garden peas in an airtight container in the fridge for at least 2 hours.
To make the pea hummus: Add all ingredients to a food processor and process until as soft as possible. Feel free to add more olive or water if you would like your hummus to be thinner.
Spread the pea hummus on the toast and top with extra garden peas, chickpeas, olive oil and herbs. Serve immediately. Store the leftover hummus in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month.
* Tip: Roast the capsicum, wilt the spinach and mash the avocado while the patties are in the oven!
