Dessert Avocados

Look twice… they’re avocados but not as you know them! These darling dessert avos are filled with a creamy oob organic frozen banana and spinach mix, with a roll of our double chocolate icecream for a pip. Ingredients

  • 2 medium-size avocados

  • 1 1/2 cups oob organic frozen banana

  • A handful of oob organic spinach

  • Dash of vanilla extract

  • Dash of plant-based milk, as needed

  • 1/2 cup oob organic double chocolate ice cream or chocolate coconut frozen dessert

Instructions

  1. Halve the avocados. Remove the seed and discard it. Scoop out the flesh and reserve for another use. Set aside the avocado skins.

  2. Add the frozen banana, spinach, and vanilla to a food processor or high-powered blender. Blend until they turn into an ice cream consistency. If your equipment is having trouble blending the ingredients, add a dash of milk and blend until smooth.

  3. Scoop the ice cream mixture into the avocado skins and smooth the top. Place them in the freezer for 1 hour or until they are firm.

  4. Use a melon baller or small round spoon to scoop out space in the green ice cream mixture for the avocado 'seeds'. Return them to the freezer.

  5. Use the melon baller or spoon to create 'balls' of the chocolate ice cream/frozen dessert to resemble avocado seeds. If the 'balls' are melting, place them in the freezer to firm up.

  6. Place the chocolate ice cream balls in the green ice cream mixture (as pictured).

  7. Enjoy immediately or store in an airtight container in the freezer for up to 1 week.
