Festive Blueberry Tarts

Ingredients:

Filling

  • 3/4 cup oob organic frozen blueberries

  • 1/2 lemon, zest and juice

  • 1 tbsp sugar

  • 1 tsp cornflour

Pastry

  • 1 cup plain flour

  • 1 tbsp sugar

  • 3 tbsp coconut oil, softened

  • Chilled water, as needed

Method:

  1. Preheat the oven to 180°C.

  2. To prepare the filling: Add all ingredients to a small bowl and toss until combined. Set aside.

  3. To make the pastry: Add the flour and sugar to a bowl and mix until combined. Add the coconut oil to the bowl and use your fingertips to rub in the oil until the mixture is flaky. Gradually add the chilled water to the bowl and mix the ingredients until a smooth dough forms.

  4. Roll out the pastry until it's about 5mm thick. Use a cookie cutter or glass to cut out 6 circles. Place the pastry circles into a cupcake mould to form tart bases.

  5. Fill each of the tarts with the blueberry filling.

  6. Re-roll the pastry and use a cookie cutter or knife to create star shapes. Place the stars on the tart filling.

  7. Bake the tarts in the oven for 25 minutes or until the pastry is golden brown.

  8. Enjoy immediately or store in an airtight container in the fridge for up to 5 days.
