This blueberry, dark chocolate and banana bread definitely needs to go in the 'scrumptious and easy to whip up' section of your recipe book! Heavenly eaten in thick slabs warm from the oven (we spread almond butter on ours too) or cool, slice and pop into lunchboxes for adults and kids alike.

RECIPE:
Ingredients:
3 handfuls of oob organic frozen sliced banana
1 Tbs chia seeds
1 tsp vanilla
200ml vanilla coconut yoghurt
1 1/4 cups Spelt Flour
1 1/4 cups old fashioned oats
1/3 cup coconut sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 cup hemp milk
30g dark chocolate, grated
30g chopped almonds
125ml hemp seed milk
1/2 cup frozen oob organic blueberries
Method:
Preheat oven to 180’C, line a loaf tray with baking paper
In a bowl, place defrosted banana and mash, mix in chia seeds, vanilla and coconut yoghurt
In a separate bowl, mix spelt flour, oats, baking powder, baking soda, coconut sugar & cinnamon
Mix in the banana mixture until just combined, gently fold in the blueberries, dark chocolate & almonds. Do not overmix as the bread will be tough
Spoon into the loaf tin, bake for 1 hour. Remove & cool. Slice & serve with a good butter!
