Raspberry Jalapeño Jam

RECIPE:

Ingredients

- 150gm oob organic frozen raspberries

- 4-5 jalapeño

- 1/2 red onion

- 1 tbsp canola oil

- 1 tbsp white wine vinegar

- 2 tbsp caster sugar

- 1 tbsp lime juice

- Pinch of salt

Method:
1. Slice the jalapeño and place in a food processor. Add onion and process until finely chopped.

2. Heat oil in a heavy based saucepan over medium heat. Add chilli and onion mixture. Stir occasionally.

3. Mix in frozen raspberries and pinch of salt. Add vinegar, sugar and lime juice. Stir until sugar dissolves and bring to the boil. Simmer on low heat till you get your desired consistency.

4. Place the jam in sterilised jar(s). When cool, seal and refrigerate.
