Rainbow Paddle Pops

These adorable patchwork paddle pops contain a medley of oob organic fruit (and spinach too!), with the only other ingredients being soaked cashew nuts and plant-based milk. Kids love joining in to create their own colour schemes 💞


Recipe:

Ingredients

  • 1 cup cashews, soaked in water overnight

  • 1 cup oob organic frozen banana

  • 1/2 cup plant-based milk, of choice

  • 1/2 cup oob organic frozen mango

  • 1/2 cup oob organic spinach

  • 1/3 cup oob organic frozen blueberries

  • 1/3 cup oob organic frozen raspberries

Instructions

  1. Add the cashews, frozen banana and and milk to a blender and blend until as smooth as possible. Divide the mixture into 4 parts and set 3 parts aside in the freezer.

  2. Add 1 part of the creamy mixture and the frozen mango to the blender. Process until smooth. Set aside in the freezer.

  3. Repeat step 2 and process 1 part of the creamy mixture with the frozen spinach, blueberries and raspberries separately. Set each mixture in the freezer while you make them.

  4. Spoon the 4 coloured mixtures into your ice block mold, pressing it down to remove any bubbles. Swirl the colours as desired. Insert sticks into your ice blocks.

  5. Freeze your ice block mold for at least 2 hours.

  6. Enjoy the ice blocks immediately or store them in an airtight container in the freezer for up to 2 weeks.
