Orecchiette with Salsiccia, Broccoli + Spinach


The ultimate comfort food from @cuginicucina - orecchiette is the perfect pasta for the ingredients in this dish. Beautifully simple Italian food at its finest, thanks Mary and Isabella for this creation!

RECIPE:

Ingredients:

  • 500g dried orecchiette pasta

  • 4 Italian continental sausages

  • 1 cup white wine

  • 1 packet oob organic broccoli

  • ½ packet oob organic spinach

  • 1 shallot, finely chopped

  • 1 small block of Grana Padano

  • Salt and Cracked Pepper

  • Olive Oil


Method:

  1. Bring a large pot of salted water to the boil. Once boiling add in the pasta. 

  2. In a wide-based saucepan, lightly fry the shallot in olive oil until softened. 

  3. Use a knife to cut the sausage casing, squeeze out the sausage into the pan and use a spoon to break it up into small pieces.

  4. Increase the heat to high. Pour in the white wine and cook until the alcohol is removed. Once the sausage has cooked, add in your broccoli and spinach. Season with salt and pepper (however remember the sausages will already have seasoning in them). 

  5. Strain the pasta once it is cooked and add it to the saucepan with the salsiccia sauce. Mix the pasta through, and use a grater to sprinkle in the grana padano to a desired amount, mix until the cheese has melted. 

  6. Serve with a little extra Grana Padano and chilli (optional)
